But the greatest part of the trouble lies with the dietitian herself and with those who train her. So few of our colleges and universities give a real dietitian's course. They are training teachers of home economics with a course adapted to that end. If a student does not do very good work in her classes or her practice teaching is below the standard or she herself flatly refuses to become a teacher, her instructors suggest to her that "well, she might become a dietitian," and she stumbles along with a few special lessons in dietetics and perhaps a short course as a student dietitian, then some years of holding positions of her own until finally, if she has the right back ground and does not become discouraged and leave the field, a real dietitian is developed. Several hospitals recognizing the need of properly trained dietitians and that the young graduate does not usually possess the necessary training, have established courses for student dietitians. But all too often they met this situation just as they met that of the nurses training schools and used their student dietitians as a means to get the drudgery of the diet kitchen work performed in an efficient manner for less money than unskilled labor would cost them. Another trouble is that the dietitian and especially the young graduate interprets dietetics as meaning diet in disease only and is not interested in diet as a preventative of disease.
